This is easy and super tasty. Buy the nicest tomatoes you can find. It makes all the difference.

My wife and I do meatless once a week. Lately we've just been grilling beyond burgers for dinner on that day. I actually really like them.

Re: Anyone here have decent recipes for plant based diet?
i'd start with some of the classics like the Moosewood cookbooks. they often have dairy-- but you can work around that if you're ONLY plant based. the food stands up though, to me-- but ultimately it depends on how you like to eat. i know they err pretty light -- and if you were used to really fatty heavy food--a lot of plant based cooking is gonna seem like eating... well.. nothing.
but my starting point, as well as several generations of vegetarian folks starting point, is laurel's kitchen (which is amazing for dietary information and the WHYS and HOWS of plant based eating), and any of the moosewood books!

You might as well eat McDonald’s. Those are just as processed. Try a black bean burger. They are easy to make and if one needs a meatless burger at least that’s real food and tastes good. Simplest and most effective health and food advice is Just Eat Real Food!. That will serve just about anyone well. Maybe make some sweet potato fries to go with it.
I’ve experimented with all forms of eating. Sometimes for health reasons, other just to see if I can optimize how I feel and energy levels. But never for weight as I’ve weighed the same since I was 23, and I’m 43 now. From Vegan to all meat Carnivore. I found I feel best with some meat protein. But everyone is a bit different. From genes to simply how your family lineage lived and ate themselves. As an aside, if I had to pick one of those two extremes, I honestly felt better with all meat! Which is crazy cause it was the last one I tried and thought that was pure madness. Lol. But To my surprise I felt pretty damn good and energetic. There is also people who have higher inflammation on all plant based vs meat consumption
To the OP there is all kinds of good recipes, don’t have any in particular besides a few that I learned and just made my own. One to maybe look up is a stir fry but use Cauliflower as the base instead of rice. Put the cauliflower in a processor and chopped up finely, steam it Til it’s soft and fry the rest in the pan as the steams. Surprisingly good.
I guess find what herbs and spices you like and do well with and that’s half the battle in finding good combinations to cook with. I sorta realized I’m a bit of a natural cook. Once I figured out the herbs and spices, I just cook. I just put together food and play around with it. Lol. Honestly it rarely doesn’t work out!

Re: Anyone here have decent recipes for plant based diet?
Somewhat unrelated, but I did a food allergies test last week and found out I'm allergic to soy, sesame seeds, corn, wheat and peanuts. I don't have an actual allergic reaction, so I never knew. But these foods were causing my thyroid to get so inflamed my body was creating antibodies against it. So it seems like a mostly protein/meat based diet is the best option for me.
Point being, go to a good nutritionist and ask them to run tests and do a study to determine the best diet for you. The idea that plant based = healthier is not necessarily true for all. Everyone is different so you should definitely take advantage of modern testing to find out what works better for you.
If I had gone into a vegan diet with soy substitutes, grains etc I'd make myself really sick in the long run and probably need my thyroid removed at some point. Get some professional advice and personalized data.

Re: Anyone here have decent recipes for plant based diet?
A beyond burger isn't any worst for you than a real burger
the beyond burger scratches the burger itch much better than a bean burger imo. Though I love a bean burger when the mood strikes.
I do a meatless day more for environmental impact than health. I eat really well and healthy regardless of my protein source.
I just like supporting these meat alternatives. I feel like if they get closer and cheaper they'll be a good thing in the long run. I half expect places like bk to start cutting their meat with the stuff if it gets cheap enough.

Re: Anyone here have decent recipes for plant based diet?
the only meatless option that seems to work for me usually involves a pasta of some sort.... no set recipe really, but usually mushrooms in some sort of simple sauce and pasta... when I do that I don't feel like I'm missing the meat.... or I just do a simple spinach and arugula salad with dried cranberries, feta cheese, thin sliced red onions and either walnuts or pine nuts with a home made vinaigrette usually does the trick for me as well.... I can't do a salad as a meal often though, especially when I know adding meat to it makes it so much better lol

How do those tests work? They look for certain genes in your blood or something?

I'm certain I'm going to butcher this but in very layman terms, the test measures the overall amount of antibodies in your blood then check how these antibodies react to specific allergens.

For sure. I’ve had similar issues with hormones out of whack and it was back when I was eating vegan. I still have digestive issues that I believe are related to my pancreas, but I was in better shape with all meat vs vegan. And some of the most unhealthy people I’ve met were vegan and believe me, that’s more than a few. Agree the testing is a good start. Because so many have issues that they have learned to live with and ignore and eventually that all catches up with most. I was talking with Raf one time about food intolerances and how to pay attention then he mentioned a friend of his had a stroke at 37 and they traced it back to food intolerance! And I believe it 100%. And yeah, especially grains today, specifically wheat, is almost unrecognizable compared to wheat of just 40 years ago. It’s been modified so much and it’s no surprise gluten intolerance is such a thing these days. I keep gluten to a minimum and don’t seem to have issues, but soy is another one and both those can be staples for vegetarians. And simply for me, I felt weaker despite taking plenty of plant protein supplements, etc. I still take a few plant protein And nutrient supplements and I swear by a few, but overall, good quality meat with some choice fresh vegetables will do most people right.

I can mow hard on some white rice and vidalia onions with a little butter and salt/pepper.
Plus lately my breakfast has gone from nothing to about 2 lbs of fruit. Not everyday, but frequently. Loads of fruit in the morning has been bringing some good body feels.

Re: Anyone here have decent recipes for plant based diet?
FWIW, a lot of people I know that describe themselves as "vegan" are just really, REALLY fussy eaters.
The wife and I have been eating different for about a year now, very low on meat, lots of plant and dairy protein. She's gone from being quite overweight with a lot of back trouble to easily running 5-6 miles and being well within her BMI, and while I've barely lost any weight my shape has become quite a bit more defined.
The best thing is that we LOVE what we're eating. It's often low carb (higher carb mornings for brain food, higher carb lunch if lots of exercise, always low carb evening), higher fat, higher protein. Quite a lot of greek-style yoghurt, which has almost completely replaced cream. LOTs of lentils and chick peas - we love those anyway. Lots of eggs from our own chickens. Plenty of veg from the garden - we had a really good crop of cutting lettuce throughout the early year, 5-6 varieties including 2 types of rocket (arugula - very tasty flowers too).
Dark chocolate, peanuts, peanut butter, drinking lots of water, quite a lot of other nut and seed additions (chia seed, flax seed, pumpkin seed).
It's also interesting that I've noticed that clearly I have some level of lactose intolerance that has increased since cutting out cow's milk (soy in my coffee, oat in my breakfast granola and oats and everything else).
I don't think we could ever cut dairy completely though - yoghurt and cheese, yum. It's okay, we literally live between the cows that give the milk that goes into our yoghurt, they are happy noisy buggers.

How deep are you wanting to go down this rabbit hole? This guy has all these videos of himself making plant based "meats". I've watched some of his videos, a lot involved for sure.
