I noticed that his voice changed quite a bit from 70s clips to 80's clips. There also was a time when he was using a shitload of gain, more than I was used to hearing from them. Was that the Marshall rack period?

He is still using a fuck ton of gain. He's got the JMP-1 into Valvestate poweramps on one side of his rig, and on the other he's got a Magnatone Super 59 into an ISO box. He replaced the racked Mojave Scorpion with the Magnatone. Go watch his rig run down where he keeps the mids on his JMP-1 at like 2.
But he also has EQ's set the to the curve of Pearly Gates that add a bunch of mids back in.

In the 80's he was using those Legend hybrid amps with a tube pre and SS power amp. Here is some info about it:

Played in a psychobilly band for a bit, the guitarist was all about the Rev. He had one of those Bionic Expandora pedals, claimed it was the secret to Gibbons tone.

He sounded nothing like Billy G, but I can't put all that on the pedal, lol.
I actually just bought tickets to the San Diego Blues Fest to see Billy Gibbons and Friends.
