Think I'm Finally Getting Somewhere... (DI Guitar Content)

I have hit on the combination of a Peavey Classic 30 (speaker unplugged) out through the extension speaker out (what I've read says this will take an out load from the power amp) into the Rivera Rockcrusher then direct into a silverface UA Apollo Duo. From there, I load the mixIR2 plug in with impulse responses of the celestion I have in my amp from the Big Box IRs.

I load up a 57 off axis, a Royer 121 on the cap and a U87 on the cap. Each mic is in it's own block. I have set a mono track in Cubase and all three mics are balanced for volume within mixIR2. I primarily record classic rock/alt country type stuff which has made it difficult to figure out how to get a decent sound. Most information I can find on these type of direct setups is related to metal production.

I know with metal size and width of the production is very important, so doubling tracks and placing different parts of the sound are a given. But is anyone recording less heavy music where you use either multiple mics on a single guitar and place those mics in different areas of the stereo field, OR using a stereo track with something like mixIR2 and placing IRs in different areas of the stereo field?
