May or may not be worth it but it's really easy to do and relatively cheap. A choke will usually give you an improvement in touch responsiveness and dynamics. Nothing that would be too noticeable in clips. They can often make the high end a little smoother too, which for me is crucial.

I installed a choke in my Yamaha T-100 head (the Soldano-designed one). The differences are subtle, but more noticeable at volume. Cheap and easy to do (the choke was $30 from MM, and I installed it in 20 minutes without ever having worked on the inside of an amp before).
"If there was only a way that I couldn't even any less than I already can't then I'd gladly not, but I think I've entered some quantum paradox, dark matter levels of can't evening where the total absolute value of not evenness exceeds all ability to explain the can'ting." - MR RUBATO

It can also have a noticeable effect on the amp noise floor and tighten the low end up.

IMO, every amp that doesn't have one should.

How does one determine what transformer is suitable as a choke for their amp?

Since chokes are cheap enough in general you might as well go with Mercury Magnetics. So just email them what your amp is and they'll tell you which of their chokes is most appropriate for your amp.
