Leaving On A Jet Plane [Crawfish]

Post by IndyWS6 »

60 pounds of "Select" sized Crawfish will be hitting the friendly skies today for a FedEx flight and early morning delivery to central Indiana tomorrow. The third annual Easter weekend boil ("Crawfish Fest 2019") is scheduled for Saturday. The weather looks iffy (FU Mom Nature), so we might be eating inside, but this shit is happening. :thu:

I used Cajun Crawfish the last two years, but went with Louisiana Crawfish Company this year. We do it over Easter weekend and CC typically has an Easter sale, but didn't this year. I guess the season is late getting started, so they didn't have the larger "graded" sizes available, either. LCC did, so I thought I'd give them a shot. They better not ruin my party :cop:

:thu: It's a lot of work, but it's a lot of fun.

Planning on doing a crab boil sometime this summer. Crawfish season ends sometime in June, so I'll need to switch to some other shelled creature

I just checked out the Louisiana Crawfish Company's website...
I had no idea you could buy "Purged" crawfish!

From their website:
"WHY PURGE CRAWFISH?
To clean out the exoskeleton of mud and debris & eliminates or reduces digesta in the intestine. We place the crawfish in our highly oxygenated water tanks, then put them through a innovative 12-24 hour purging process. You are left with sweet, tender, flavorful crawfish."

It sounds like they put the crawfish in poop tanks, where they pass their last meal before shipping to the customer! Amazing!

I'm making "Drunken Shrimp Cocktails" to sip on while setting up and cooking. It's basically a Bloody Mary with extra heat served in a glass rimmed with Old Bay Seasoning with a couple of cocktail shrimp hanging on the side.

I suspect that you lose some flavor by purging!

As a follow-up, they were delicious. :thu:

The weather sucked; we stood just inside the garage to keep out of the elements on a rainy, windy, 38° day. It was a blast as usual, but nice spring weather would have been welcome.

I paid the upcharge for the "Select" size, so they were bigger than what you would normally get. There were some that were average, most were "big" and there were a few monster-sized bastids. Those are the ones we played with

I think I found less than 10 dead ones out of 60 pounds total (2-30 pound bags)...
