I've had a fair amount of experience with them. At uni the studio room I liked the most had a 2408. I preferred it to the digi pro tools stuff because it's got a bit more colour to it in the low end and the treble is a little hazy. Great for rock music. By comparison the digi stuff lacked balls. Same story with the 828 mk2 I've used on all my recordings for the last few years. Their limitation is definitely that slightly hazy quality, but perfectly acceptable for a converter priced at the lower end of the pro market.

Latency depends more on your computer than on the interface. Any half-decent interface is capable of recording latency free provided your computer can handle the extra load on the RAM and CPU.
Guitars:
'78 Les Paul Pro / '89 SG Special/ '04 Gibson Les Paul Classic 3 pickup / Jackson Star/ Endres Tele / Fernandes Rhoads/ ''74 Hohner MIJ strat/ 2 Partscasters
Amps:
Depends on when you ask. I got tired of constantly updating this section lol
Cabs
Marshall 1960A w V30s/ Seismic 2x12 w Redback and V30.

I have a old Dell I might build up and use just for recording.
I had a mbox USB and it had some small latency, using the same computer with my Digirack 2 and it was gone...but it was firewire.
