This, kinda. I've never been successful in my attempts to pancake potatoes.

I had an apple this morning. And if you're my FB friend, you already know these apples are delicious.

um. i had a bowl of malt-o-meal brand frosted shredded wheat.

but it was like 1.5 servings. with lite Vanilla Silk. and i didn't drink the leftovers.

From scratch, breaux. I have a chunk of skin missing off of my thumb knuckle from the grater to prove it :lol:

I used one whole onion, a clove of garlic, about 6 or 7 medium sized potatoes, ground all that up by hand (since I don't have a food processor) I use the fine side of the grater.

then--and this is IMPORTANT--pressed the mixture to get all of the excess moisture out. A wet mix makes for crappy pancakes.

Added two eggs, course ground black pepper and kosher salt (probably like half a teaspoon of each...I just eyeball it) mix by hand, started adding flower by the tablespoon until it looked right. I'd imagine around 3/4 of a cup ended up in there. POSSIBLY more.

Oil in the cast iron pan, then just cook it like a boss.
