Cold brew = bast. We have a couple containers with strainers built in that we set in the fridge overnight and then the next morning it's perfecto. I like hazelnut, while the wife prefers the doughnut shop blend.

I remember back in my milking days, we'd have a pot brewed up, each take a big jar and fill it halfway with milk, then pour in the coffee. Real whole milk. We'd just filter and pasteurize it for our own use. I've yet to find any store-bought milk that tastes that good. Therefore, I no longer put milk in my coffee.

I was never a real coffee drinker, and when I was, I always dressed it like candy.

But when I used to do my intermittent fasting, I relied on it for energy in the morning. Of course, no sugar or dairy was allowed. But the coffee at work was so distastefully strong, I watered it down to almost a tea. And it was at this mild level, I started noticing subtleties, albeit, it was still work coffee. But I developed an appreciation for black coffee because I could now taste it. I avoid the punch-in-the-face experience of strong coffee by adjusting how much I sip.

I agree, there's a "polluting" or "corrupting" effect, for me, when I doctor "quality" coffee. If I want sweets and creamers, I just go with instant.

Kinda like steak, I guess. I want to taste the quality of the meat. Otherwise, yeah, slather the BBQ sauce, butter, A1 (good lawd . . .).

Hell, I'm like that with guitar tone: just plug straight in, y'know? I want to hear the guitar and amp, not the effects. If I wanted to play an effects-laden tone, I'd play my Hello-Kitty Squier through my Katana. Otherwise, it's my Strat straight into my AC15 or Bassman.

I start with 1 caf and then try to hit a lot of decaf these days. Too much caf and I get too intense to those closest to me. It's a fine line between getting energy and becoming a jacked-up drill Sargent.

Also trying to cut my sugar- I'm almost all the way out, been cutting a little bit at a time and down to just a smidge. Definitely feels better than when I used to heap 2 spoons ugggh.

I have spent the last four years figuring out the best ratio of ground coffee to water, for the strongest cold brew concentrate, short of extra-caffeinated coffee. I think I figured it out: 1 strong pound/455g light-roast, semi-coarsely-ground coffee (don’t skimp on quality): ~1.25gal/4.75L of filtered water, to account for the 1 qt. of absorption by the coffee (it is a dried cherry stone, after all). I use a 2gal bucket, and an ultra fine filter bag, used for filtering hops out of beer (this is where being a home brewer comes in handy), cover, and steep for anywhere from 24-48 hours, depending on how lazy I am. Let the excess run out of the grounds, don’t squeeze the bag (because your hands will be soaked), decant to a pitcher, serve over a lot of ice, and let it dilute to your preferred taste. I make a pitcher last a week, and that’s not a good thing; the flavor does go off.

Hot coffee: I use a pour-over, because I live alone. ~33g, paper filter, gooseneck kettle, and hope to hell that the filter doesn’t break. That’s been happening a lot lately. Occasionally, I’ll use my French press or my Chemex. Coffee never, and The Rock means NEVER, looks cooler than it does in a Chemex.
