Spyderco for EDC. Merlin in the summer and a Harpy for the winter. Those Farnhams remind me of Daemoness guitars...

I also have TONS of crappy folders (Bear Grylls, Gerber, noname, gas station glass case) in my camp packs, bugout bags, tackleboxes, and gloveboxes lol. Always have a blade handy.

My main chef's knife is a Shun 10" premier

That said, I'll use anything with a nice edge.
sam's club santoku with the white handle, made in Brazil
Wusthof 8" grand prix 2 Chef's
unlabeled Japanese 10" chef's knife
Chinese Kai knives
etc.

I carry a little bench made in my office bag
I keep a Kershaw Asset at my desk for packages
etc.

I like all knives.

There's something to be said for this approach. Keep misc little knives all over the place (flashlights too) so you always have one around. I keep my beater Kershaw Blur in my car all the time. I've got a Benchmade Presidio that's totally wore the hell out, as in, edge is shot, needs a total re-grind, no anodizing left on the handle, action is still surprisingly tight tho. It's amazing how beat up my shit gets considering I don't "abuse" them. But I do use the hell out of them. I need to drop it off next time I'm up there and have them recondition it.

haha yup...probably 30 flashlights all over the house in locations the wife and kids know too.

Knives are just so useful. Like, duct tape/paperclip/rubber band useful.

I also have a crappy 3 inch Black Label Tac knife that I love. It was 30 bucks at Gander Mtn, and it's held an edge forever for some odd reason.

90% of my cutting tasks are done with my house key.

I have a Buck fixed blade knife that sits in the basement and a folding Western knife that I take when I want to feel outdoorsy. I also have a Swiss Army knife too but it's really stiff and hard to open anymore.

My brother gave me a Kershaw for xmas. Very nice knife.

But in the instructions, it said that this knife is NOT a stabbing knife,

but a cutting knife. Now I've got find a good stabbing knife :D

I use to collect pocket knives when I was in my early teens.. nothing fancy, just liked having them... since I got in to cooking more seriously a few years ago I've been using the Henckels Zwilling Pro series knives, have the 8" Chef, 8" Santoku, 8" Carving and the 4" Paring... great knives, after trying different options I've found that nothing beats using a good oil or water stone to sharpen and keep the edge... I need to take my chef knife to get the edge redone though... years of using those stupid table top sharpeners have reshaped the edge and my stone just isn't going to bring it back to factory, the Santoku and parking knife however are razor sharp... I think if I have the cash and no GAS for gear a Shun Classic will be added to the pack...

I've got a Buck 482 I carry for work when I have to skin a pallet of incoming computers, a Swiss Army Tinker (really need to replace my lost Explorer) for everyday.

I have a Spyderco Aquasalt (1) for saltwater fishing, my only real "boutique" knife.

I bought a mini Ka-Bar hunter for small game, a very nice little knife that isn't a stupid Rambo accessory. I have a nice utility Gerber lockback I don't use much.

I've got a bunch of Henckels for cooking I bought many years ago. Still great, but I also have some cheap-ass Chicago Cutlery with ergonomic handles that are just terrific tools.

Does anyone else strop their kitchen knives ?

I'd actually like to indulge myself with some Bark River models and use them in the kitchen just for the hell of it.

Full Victorinox knife set, Kershaw shears, and a Wüsthof steel. I'll swap it out for a Victorinox, but that's not happening any time soon. The steak knives are the Victorinox Gaucho set, which are very hard to find in the US.

I'm waiting on delivery on this Out The Front dual automatic. They are made in Taiwan but get great reviews. Can't see paying 5 bills for a Microtech OTF and losing it :cry:

This is pretty much my approach too.

Global G2 8" and Henckels Pro S chef knives, also a Global paring knife.

Then a bunch of cheap-ish folders kicking around. CRKT M-16 EDC, CRKT M-21, Spyderco Tenacious, Kershaw Leek

A couple fixed blades - CRKT Sting, some chinesium rainbow finished thing, chinesium "S&W" hawkbill thing, chinesium butterfly knife.

Then a cheapo gerber mini multitool at work.

I've got a few shitty blades kicking around here somewhere - cheap folders, a Gerber and some other random stuff. I use Henckels in the kitchen too. Also, I can't tell you how many steps my Leatherman has saved me. If I can't fix it with my Leatherman than shit is really fuckin' broke.

Never owned a Spyderco. I've heard good things, but I can't see one of them displacing this Zero Tolerance for EDC. It's that good.

Dude I've had those Spyders for years and went thru a ton of others before I bought those. Haven't even thought about another knife since. They're badass.

I'm starting to get my sons used to handling knives. They all hold a pocket knife when we're hiking on a trail. At first I just had them hold them on them and told them that they couldn't start using them until I saw that they could hold them and forget about them, not be all brandishing or constantly curious and wanting to take it out. Then I'd sit them down to whittle the outer layers of bark off of sticks and shit. And that's as far as we are for now. I need to see them cutting away from themselves, not resting sticks on their legs while they whittle and shit... all that basic safety and handling, and then we can move on to using them for jobs.

The oldest got a cool swiss army knife. We used it on the last trip. The toddler touched the top of a gas lantern and burned her hand a little so I had to break out the first aid kit for some burn cream and a gauze wrap. He used the scissors on his swiss to cut the gauze and tape. We also used his corkscrew for the wine bottle that night. :lol:

Stuff like this. Little by little. Very soon the oldest two will get the army issue knife and flint stick holster for when we need to spark up the campfire. :D

Benchmade axis mini barrage is what I have now and its been good so far. I would like to get a spyderco military or paramilitary 2.
